Potato and Courgette Roses
17/11/2023Potato and courgette roses are an elegant and tasty dish that can make a great impression as an appetizer or side dish. Here is how to prepare them:
Ingredients
- 2 medium-sized potatoes
- 2 courgettes
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh rosemary (or other aromatic herb of your choice)
- Grated Parmesan cheese (optional)
- Sweet paprika (optional, for a touch of color)
Preparation
- Preheat the oven to 180°C (if convection, 160°C).
- Wash and peel the potatoes, then use a mandolin to slice them very thinly.
- Wash the courgettes and, without peeling them, also slice them thinly with the mandolin.
- In a bowl, season the slices of potatoes and courgettes with a drizzle of oil, salt, pepper, and chopped aromatic herbs. If you like, you can also add a bit of sweet paprika and grated Parmesan cheese for an extra touch.
- Take a baking tray and, if necessary, line it with parchment paper.
- Begin to form the roses by alternating petal over petal (one slice of potato followed by one of courgette, and so on) until the desired size of the rose is achieved.
- Continue with the rest of the slices, forming as many roses as possible.
- Arrange the roses in the tray, ensuring to leave a bit of space between each one.
- If you wish, sprinkle an additional pinch of Parmesan over each rose.
- Bake for about 20-25 minutes, or until they are golden and crispy.
- Remove the potato and courgette roses from the oven and serve them hot.
