Potato and Spinach Patties with Provola Cheese

Ingredients

  • 500 g of potatoes
  • 200 g of fresh or frozen spinach
  • 100 g of provola (or mozzarella, if you prefer)
  • 1 egg
  • 50 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg as needed
  • Breadcrumbs as needed
  • Extra virgin olive oil (for frying or for baking)

Preparation

  1. Start by boiling the potatoes in hot water until they are soft. Once ready, drain, peel, and mash them with a potato masher or a fork to make a puree.

  2. Meanwhile, cook the spinach in a pan with a bit of oil and garlic if you wish to add some flavor. If you are using frozen spinach, make sure to thaw it out and squeeze it well to eliminate excess water.

  3. Cut the provola into small cubes.

  4. In a large bowl, combine the mashed potatoes with the cooked spinach, add the egg, the Parmesan, a pinch of salt, pepper, and a grate of nutmeg. Mix well until all ingredients are evenly combined.

  5. Take a bit of the mixture with your hands, flatten it, and place a cube of provola in the middle, then close the mixture around it to form a patty. Repeat until all ingredients are used up.

  6. Roll each patty in breadcrumbs.

  7. At this point, you can choose whether to fry the patties in plenty of hot oil until golden or bake them in the oven at 180° C for about 20 minutes until they are golden and crispy on the outside.
