Potato and Speck Fritters

Ingredients
- 500 g of potatoes
- 100 g of diced speck
- 1 egg
- 50 g of flour
- 50 g of grated cheese (e.g., Parmesan)
- Salt and pepper to taste
- Nutmeg (optional)
- Oil for frying
Preparation
- Start by boiling the potatoes in salted water until they are soft. Once they are ready, drain them and let them cool down.
- Peel and mash them with a potato masher or a fork until you get a fine mixture.
- In a bowl, add to the potatoes the speck, egg, flour, grated cheese, salt, pepper, and a sprinkle of nutmeg if you like. Mix well until the mixture is even.
- Heat the oil in a frying pan. Using two spoons, form small fritters with the potato mixture and gently place them in the hot oil.
- Fry the fritters until they are golden on both sides, then remove them with a slotted spoon and place them on a plate lined with paper towels to remove excess oil.
- Serve the potato and speck fritters hot, as an appetizer or main course, accompanied by a fresh salad.
