Potato and Speck Fritters

Potato and speck fritters combine the simplicity of mountain cooking with the smoky taste of speck. Here’s how you can prepare them.

Ingredients

  • 500 g of potatoes
  • 100 g of diced speck
  • 1 egg
  • 50 g of flour
  • 50 g of grated cheese (e.g., Parmesan)
  • Salt and pepper to taste
  • Nutmeg (optional)
  • Oil for frying

Preparation

  1. Start by boiling the potatoes in salted water until they are soft. Once they are ready, drain them and let them cool down.
  2. Peel and mash them with a potato masher or a fork until you get a fine mixture.
  3. In a bowl, add to the potatoes the speck, egg, flour, grated cheese, salt, pepper, and a sprinkle of nutmeg if you like. Mix well until the mixture is even.
  4. Heat the oil in a frying pan. Using two spoons, form small fritters with the potato mixture and gently place them in the hot oil.
  5. Fry the fritters until they are golden on both sides, then remove them with a slotted spoon and place them on a plate lined with paper towels to remove excess oil.
  6. Serve the potato and speck fritters hot, as an appetizer or main course, accompanied by a fresh salad.
