Potato and Speck Croquettes

Potato and speck croquettes are a tasty finger food, ideal for an appetizer or an aperitif. Below you will find the recipe to prepare this delicious Italian dish with a hint of smoky flavor from the speck.

Ingredients

  • 500 g of potatoes
  • 100 g of speck
  • 100 g of grated cheese (Parmesan or Parmigiano)
  • 2 eggs
  • Nutmeg to taste
  • Salt and pepper to taste
  • Flour as needed
  • Bread crumbs as needed
  • Oil for frying

Preparation

  1. Start by boiling the potatoes in salted boiling water until they are soft. Once ready, drain and let them cool.
  2. Peel them and mash them with a potato masher or a fork until you have a smooth puree.
  3. Cut the speck into small cubes and lightly sauté in a non-stick pan until it becomes crispy.
  4. Add the speck to the potato puree, along with the grated cheese, a pinch of nutmeg, salt and pepper. Mix all the ingredients well.
  5. When the mixture has cooled, add an egg and mix until you have a smooth dough from which you can form croquettes.
  6. Shape small oval or round croquettes with your hands.
  7. Coat them first in flour, then in beaten egg (with a pinch of salt) and finally in bread crumbs, making sure they are well covered.
  8. Heat plenty of oil in a pan and when it has reached the temperature, fry the croquettes until they are golden and crispy on all sides.
  9. Drain them on paper towels to remove excess oil and serve hot.
