Potato and Sausage Flan

The potato and sausage flan is a rich and tasty dish, perfect for days when you are looking for comfort food with an Italian twist. Here’s the recipe:

Ingredients

  • 800 g of potatoes
  • 250 g of sausage
  • 100 g of grated Parmesan cheese
  • 2 eggs
  • 200 ml of cooking cream
  • 1 tablespoon of butter
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste
  • Breadcrumbs as needed

Preparation

  1. Start by boiling the already cleaned potatoes in salted water until they are soft. You can check if they are cooked by inserting a fork into the potatoes; if it goes in without resistance, they are ready.

  2. In the meantime, remove the casing from the sausage and crumble it in a non-stick pan. Cook the sausage over medium heat without adding extra fat, until it becomes golden and crispy, then set it aside.

  3. Once cooked, drain the potatoes and mash them with a potato masher or a fork in a large bowl. Let the mashed potatoes cool down a little.

  4. Add the Parmesan cheese, eggs, salt, pepper, and a pinch of nutmeg to the mashed potatoes. Mix everything together well.

  5. Incorporate the sausage and cream, and mix the mixture gently until everything is well absorbed and uniform.

  6. Butter a baking dish and sprinkle breadcrumbs on the bottom and sides.

  7. Pour the mixture into the mold, level it with a spatula, and sprinkle the surface with more breadcrumbs. Distribute a few flakes of butter on top.

  8. Bake the flan in a preheated oven at 200 °C for about 30-40 minutes, or until the surface is golden brown and crispy.

  9. Let the flan rest for a few minutes before serving it. You can serve it directly in the mold or unmold it onto a serving plate.

The flan can be easily personalized according to taste. For example, you can add aromatic herbs such as thyme or rosemary to give an even more inviting aroma. Also, if you want a lighter variant, you can replace the cream with Greek yogurt or milk.
