Potato and Salmon Salad

Ingredients

  • 400 g of potatoes
  • 200 g of smoked salmon
  • 1 small red onion
  • 2 tablespoons of salted capers (rinsed and desalinated)
  • Juice of 1 lemon
  • 4 tablespoons of extra virgin olive oil
  • Salt and pepper to taste
  • Chopped parsley to taste

Preparation

  1. Start by boiling the potatoes: wash them and cook them in boiling salted water until they are tender but still firm. The time varies depending on the size of the potatoes, but usually it’s around 20-30 minutes.
  2. In the meantime, thinly slice the red onion and soak it in cold water with a pinch of salt to make it less pungent.

  5. Cut the smoked salmon into strips or squares.
  6. In a large bowl, gently mix the potatoes, the salmon, the red onion, and the capers.
