Ingredients
- 500 g of floury potatoes
- 200 g of smoked salmon
- 200 ml of fresh cream
- Salt and pepper to taste

Preparation
- Preheat the oven to 180 °C.
- Wash the potatoes thoroughly and then slice them thinly, preferably with a mandoline for an even thickness. It is not necessary to peel them if you like the skin and prefer a more rustic look.
- Grease a baking dish with some olive oil and start to overlap a layer of potatoes, lightly salt them, and add a pinch of pepper.
- Continue alternating layers of potatoes with layers of smoked salmon slices until all ingredients are used.
- Pour the fresh cream over the potatoes and let it penetrate between the layers.
- Cover the dish with a sheet of aluminum foil and bake for about 30-40 minutes, until the potatoes are soft.
- Remove the aluminum foil and cook for another 10-15 minutes to brown the surface.
- Take the potato and salmon mille-feuille out of the oven and let it cool down a moment before cutting it.
- Serve the mille-feuille garnished with chopped chives for a touch of freshness and color.
