Potato and Rice Sformatini

Ingredients

  • 200 g of rice
  • 400 g of potatoes

Preparation

  1. Preheat the oven to 180°C.
  2. Peel the potatoes, cut them into cubes, and cook them in salted water until they are soft. Once ready, drain and mash them with a potato masher or a fork, obtaining a puree.
  3. Cook the rice in plenty of salted water for the time indicated on the package, trying to keep it al dente. After cooking, drain and cool it under cold water.
  4. In a bowl, mix the rice with the mashed potatoes, adding the eggs, Parmesan cheese, a pinch of nutmeg, salt, and pepper until you have a homogeneous mixture.
  5. Grease the molds with some butter and sprinkle the inside with a bit of breadcrumbs.
  6. Fill the molds with the potato and rice mixture, pressing down lightly with a spoon.
  7. Bake the sformatini for about 20 minutes or until they are golden on top.
  8. Let the sformatini rest for a few minutes before gently unmolding them.

If you want, you can add extra ingredients to the mixture such as diced cooked ham, peas, or cubed cheese to make the sformatini even more tasty.
