Ingredients

  • 2 medium potatoes
  • 1 large onion
  • 2 eggs
  • 4 tablespoons of flour
  • Salt to taste
  • Black pepper to taste
  • Oil for frying (vegetable or olive oil, according to preference)

Preparation

  1. Start by peeling the potatoes and grate them with a coarse grater. Place the grated potatoes in a colander and squeeze them well to remove the excess water.
  2. Peel the onion and slice it thinly or grate it as you did with the potatoes.
  3. In a large bowl, mix the grated potatoes and onions. Add the eggs, flour, salt, and black pepper. Mix well until you have a homogeneous batter.
  4. Heat plenty of oil in a high-sided pan. When the oil is hot, take a spoonful of the batter and pour it into the oil, slightly flattening it to give the fritter a flat shape.
  5. Fry the fritters until they become golden on both sides, then drain them on paper towels to remove the excess oil.
