Potato and Onion Fritters
17/11/2023Potato and onion fritters are a simple yet tasty dish that can be served as an appetizer or a side dish. Here is the recipe:
Ingredients
- 2 medium potatoes
- 1 large onion
- 2 eggs
- 4 tablespoons of flour
- Salt to taste
- Black pepper to taste
- Oil for frying (vegetable or olive oil, according to preference)
Preparation
- Start by peeling the potatoes and grate them with a coarse grater. Place the grated potatoes in a colander and squeeze them well to remove the excess water.
- Peel the onion and slice it thinly or grate it as you did with the potatoes.
- In a large bowl, mix the grated potatoes and onions. Add the eggs, flour, salt, and black pepper. Mix well until you have a homogeneous batter.
- Heat plenty of oil in a high-sided pan. When the oil is hot, take a spoonful of the batter and pour it into the oil, slightly flattening it to give the fritter a flat shape.
- Fry the fritters until they become golden on both sides, then drain them on paper towels to remove the excess oil.
- Serve hot.
Curiosity
Potato and onion fritters, also known as “latkes” in the Ashkenazi Jewish tradition, are particularly popular during the Hanukkah holiday. In Italy, this type of fritter can be found in regional variations, with the addition of other ingredients such as grated cheese or aromatic herbs.
