Potato and Gorgonzola Dumplings

Ingredients

  • 500 g of potatoes
  • 100 g of gorgonzola cheese
  • 1 egg
  • 70 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Nutmeg to taste
  • Breadcrumbs as needed
  • Oil for frying

Preparation

  1. To begin, wash the potatoes and cook them in boiling water until they are soft. The necessary time usually varies from 20 to 30 minutes depending on the size of the potatoes.

  2. Once cooked, drain them, peel them and mash them using a potato masher or a fork, collecting everything in a large bowl.

  3. Add the gorgonzola cut into small pieces, the egg, the grated Parmesan, a pinch of salt, pepper, and some grated nutmeg to the mashed potatoes. Mix the mixture until it is homogeneous.

  4. Take some of the mixture and form dumplings of about 3-4 centimeters in diameter. Roll them in breadcrumbs, making sure they adhere well to the entire surface.

  5. Heat plenty of oil in a frying pan and when it has reached the right temperature, fry the dumplings until they are golden and crispy on all sides.

  6. Once cooked, remove them from the oil and place them on paper towels to remove the excess oil.

  7. Serve the potato and gorgonzola dumplings hot or warm, as you like.
