Potato and Eggplant Crumble without Eggs
17/11/2023The potato and eggplant crumble is a delicious vegetarian dish that can be easily adapted to exclude eggs. Here is the egg-free recipe:
Ingredients
- 600 g of potatoes
- 2 medium eggplants
- 150 g of flour (you may need to adjust the quantity)
- 50 g of breadcrumbs
- 60 g of cold butter (or margarine for a dairy-free version)
- 100 g of grated cheese (pecorino, parmesan, or a vegan version if necessary)
- Salt and pepper to taste
- Extra virgin olive oil
- Garlic (1 clove)
- Fresh basil
- 400 g of canned peeled tomatoes or tomato passata

Start by peeling and boiling the potatoes in salted water until they are soft. Then, mash them roughly and let them cool.

In the meantime, cut the eggplants into cubes and sprinkle them with salt to remove the bitterness. After about 15-20 minutes, rinse and dry them. Sauté a clove of garlic in oil and then add the eggplant cubes, letting them cook until they are soft. You can add the crushed peeled tomatoes, salt, and let it cook for about 15 minutes until you get a thick sauce. Remove the garlic and add fresh basil towards the end of cooking.

Prepare the crumble by combining the flour, breadcrumbs, grated cheese, salt, pepper, and cold butter cut into cubes. Work the mixture with your hands until you get a sandy consistency.

In a baking dish, create a layer with half of the sandy mixture, then add a layer of mashed potatoes and on top of this spread the eggplant sauce.

Cover with the rest of the sandy mixture, creating the “crumbled” effect.

Bake in a preheated oven at 180 °C for about 30-40 minutes or until the surface becomes golden and crispy.

Let it rest a few minutes before serving.
This crumble is delicious both hot and at room temperature and is a great way to enjoy the flavor of eggplants and potatoes in a single dish.
