Potato and Cucumber Salad

Potato and cucumber salad is a simple and fresh dish, perfect for summer or as a light side dish. Here’s how to prepare it:

Ingredients

  • 500g of potatoes
  • 2 medium cucumbers
  • 1 small red onion
  • Parsley to taste
  • Salt and pepper to taste
  • Extra virgin olive oil to taste
  • Vinegar (apple or white wine) to taste
  • (Optional) Black olives or capers to add a touch of Mediterranean flavor
  • (Optional) A pinch of mustard or mayonnaise to add creaminess

Preparation

  1. Wash the potatoes and cook them in a pot with plenty of salted water. Boil them until they are tender but still firm, for about 20-30 minutes depending on size.
  2. In the meantime, wash the cucumbers and slice them into thin rounds or half-moons, according to preference.
  3. Peel and finely slice the red onion.
  4. Once cooked, drain the potatoes and let them cool. Then peel and cut them into cubes.
  5. In a large bowl, combine the potatoes with the cucumbers and onions. Add chopped parsley, salt, and pepper to taste.
  6. Dress with extra virgin olive oil and vinegar, and mix everything well. For a more complex flavor, you can add a pinch of mustard or a tablespoon of mayonnaise.
  7. Let it rest in the refrigerator for at least 30 minutes before serving, so the flavors have time to blend.
  8. If desired, add black olives or capers at the end for an additional touch of taste.
