Melty Curry Rice Cups
17/11/2023Curry-flavored melty rice cups are an original idea that combines the creaminess of rice with the spicy flavor of curry and the deliciousness of stretchy cheese. Here’s the recipe to make them.
Ingredients
- 200 g of Arborio or Carnaroli rice
- 1 small onion, finely chopped
- 1 tablespoon of extra virgin olive oil
- 1/2 teaspoon of curry powder (or to taste)
- 500 ml of vegetable broth
- 100 g of stretchy cheese (such as mozzarella or provola), cut into cubes
- 50 g of grated Parmesan cheese
- 2 eggs
- Salt, as needed
- Butter and breadcrumbs for greasing and sprinkling the molds
Preparation
- Prepare the vegetable broth and keep it warm over low heat.
- In a large pan, sauté the finely chopped onion in the extra virgin olive oil until it becomes translucent.
- Add the rice and toast it for a few minutes until the grains become shiny.
- Dust the rice with curry and mix well to flavor.
- Start adding the vegetable broth, one ladle at a time, waiting for the previous addition to be absorbed by the rice before adding the next. Continue like this for about 18 minutes or until the rice is al dente.
- Turn off the heat and incorporate the grated Parmesan cheese. Let the risotto cool down.
- Once the risotto has cooled, add the beaten eggs and mix well to combine everything.
- Prepare some molds for the cups (or muffin cups) by greasing them with a bit of butter and sprinkling with breadcrumbs.
- Fill each mold with a layer of rice, then add some cubes of stretchy cheese in the center and cover with more rice.
- Bake in a pre-heated oven at 180 °C for about 15-20 minutes, or until the surface of the cups is golden brown and crispy.
- Let them rest a few minutes before unmolding and serving them still warm.
