Ingredients
- 500 g of potatoes
- 200 g of diced bacon
- 300 g of type 00 flour
- 2 eggs
- 100 g of grated Parmesan cheese
- Nutmeg to taste
- Salt to taste
- Pepper to taste
- 100 g of butter
- Fresh sage leaves
Preparation
- To begin, boil the potatoes in salted water until they are perfectly cooked. Once ready, drain them, peel them, and mash them with a potato masher.
- In a pan, brown the bacon until it becomes crispy, then mix it with the mashed potatoes.
- Add the Parmesan cheese, salt, pepper, and a pinch of nutmeg to the potato and bacon mixture. Let it cool down.
- Meanwhile, prepare the egg pasta by working the flour with the eggs and a pinch of salt, until you obtain a smooth and homogeneous dough. Let it rest covered with a kitchen towel for about 30 minutes.
- Roll out the pasta into thin sheets and place a teaspoon of the potato and bacon filling in the center of each portion.
- Close the tortelli by sealing the edges well and giving them the desired shape.
- Cook the tortelli in plenty of salted water. They are ready when they float to the surface.
- Meanwhile, in a pan, melt the butter with the sage leaves until the butter becomes slightly golden.
- Drain the tortelli and season them with the melted butter and sage. Sprinkle with extra Parmesan if desired and serve hot.
