Pork Tenderloin with Honey and Ginger

Ingredients

  • 1 pork tenderloin approximately 500-700 g
  • 2 tablespoons of honey
  • 1 piece of fresh ginger (or 1 teaspoon of ginger powder)
  • 2 cloves of garlic
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • Juice of 1/2 a lemon
  • 1 glass of white wine (optional)

Preparation

  1. Start by pre-heating the oven to 190 °C.
  2. Clean the pork tenderloin by removing any excess fat and membrane.
  3. In a bowl, mix the honey, lemon juice, and grated ginger (or ginger powder).
  4. Peel the garlic cloves and crush them slightly.
  5. In a large non-stick skillet that can contain the tenderloin, heat a drizzle of oil and brown the garlic.
  6. When the garlic turns golden, remove it and add the tenderloin. Brown quickly on all sides until golden.
  7. Brush the tenderloin with the honey and ginger mixture, and season with salt and pepper.
  8. If desired, deglaze with a glass of white wine and let the alcohol evaporate for a couple of minutes.
  9. Transfer the tenderloin to a baking dish and place it in the oven.
  10. Roast in the oven for about 25-30 minutes or until a meat thermometer inserted into the center of the tenderloin reaches 63 °C for a medium-rare cook.
  11. Remove the tenderloin from the oven and let it rest covered with aluminum foil for 5-10 minutes before slicing.

Serve the pork tenderloin in slices, drizzling it with the cooking juices left in the pan. To further enhance the flavors, you might add a sprinkle of chopped aromatic herbs, such as rosemary or thyme, adding them to the honey and ginger before brushing the meat.
