Ingredients

  • 1 pork tenderloin (about 500-600 grams)
  • 200 grams of sour cherries in syrup

For the mashed potatoes:

  • 3-4 medium potatoes
  • 50 ml of cooking cream
  • 30 grams of butter
  • Salt and nutmeg to taste

Preparation

  1. Start with the mashed potatoes: peel the potatoes, cut them into cubes, and boil them in salted water. Cook until they become tender, which should take about 20-25 minutes.

  2. Meanwhile, prepare the tenderloin. Preheat the oven to 180 °C. Tie the tenderloin with kitchen twine to maintain a uniform shape during cooking.

  3. Season the tenderloin with salt and pepper. Heat a pan with a drizzle of oil and a couple tablespoons of butter, add the rosemary and brown the pork tenderloin on all sides until a nice golden crust forms.
