Pork Souvlaki
17/11/2023Pork Souvlaki is a rustic and tasty dish typical of Greek cuisine, reliable for a quick and delicious meal. Here is a simple version of the recipe:
Ingredients
- 500 grams of pork (preferably chosen from lean cuts, such as tenderloin),
- 2 tablespoons of olive oil,
- 1 tablespoon of lemon juice,
- 2 cloves of garlic, minced,
- 1 teaspoon of dried oregano,
- 1/2 teaspoon of dried rosemary,
- Salt and pepper to taste,
- Bell peppers and onions (optionally cut into pieces, to thread on the skewers),
- Greek pita and tzatziki for serving.
Preparation
- Cut the pork into 2-3 cm cubes.
- Prepare the marinade in a bowl by mixing the olive oil, lemon juice, minced garlic, oregano, rosemary, salt, and pepper.
- Add the pork cubes to the bowl and mix well so that the meat is completely covered with the marinade. Leave to marinate for at least 1 hour in the fridge, even better if overnight.
- If you are using wooden skewers, soak them in water for at least 30 minutes before using, to prevent them from burning during cooking.
- Prepare the skewers by threading the pork cubes (and alternating with bell peppers and onions if desired).
- Cook the Souvlaki on a hot grill, turning the skewers occasionally, until the meat is well browned and cooked through (about 10-15 minutes).
- Serve the Souvlaki hot accompanied by pita and tzatziki.

In Greece, Souvlaki is often consumed directly on the street or in small taverns, stuffed into pita bread along with fresh vegetables, tzatziki sauce, and sometimes french fries.
