Beer Pork Roast

The beer pork roast is a hearty and flavorful dish that can be a true comfort food. Below you will find the ingredients and the preparation to make this dish.

Ingredients

  • 1 piece of pork roast (about 1 kg)
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 2 medium onions, sliced
  • 2 cloves of garlic, chopped
  • 500 ml of light beer (preferably lager or pilsner type)
  • A sprig of fresh rosemary
  • A sprig of fresh thyme
  • 2 bay leaves
  • 2 tablespoons of Dijon mustard (can vary according to taste)

Preparation

  1. Pre-heat the oven to 160 °C.
  2. Generously salt and pepper the pork roast.
  3. In a large skillet or an ovenproof casserole dish, heat the oil and butter over medium-high heat. Add the roast and brown it well on all sides until golden; then remove and set aside.
  4. In the same skillet, add the onions and garlic, reduce the heat and sauté until they are soft and translucent.
  5. Place the roast back in the skillet with the onions and garlic. Add the beer, sprigs of rosemary and thyme, bay leaves and spread the mustard on top of the roast.
  6. Cover the casserole with a lid or aluminum foil and bake. Cook for about 2 hours, or until the meat is tender.
  7. Remove the roast from the skillet and let it rest for 10-15 minutes before slicing.
  8. Meanwhile, you can strain the cooking juices through a sieve and heat them over medium heat to reduce and concentrate the flavors, obtaining a sauce to serve with the roast.
