Pork Roast Meatballs

Pork roast meatballs are a tasty way to use pork roast in a different and appealing form. Here is a recipe you can follow:

Ingredients

  • 500 g of cooked and minced pork roast
  • 1 egg
  • 2 tablespoons of grated Parmesan cheese
  • 2 tablespoons of breadcrumbs
  • 1 clove of garlic
  • Chopped fresh parsley to taste
  • Salt and pepper to taste
  • Extra virgin olive oil for frying

Preparation

  1. In a large bowl, combine the minced pork roast, egg, Parmesan, breadcrumbs, finely chopped garlic, and parsley. Mix everything well to obtain a homogeneous mixture. If the mixture is too dry, you can add a little milk; if too wet, add more breadcrumbs.
  2. Season the mixture with salt and pepper to your taste.
  3. Take small portions of the mixture and shape them into round meatballs with your hands.
  4. Heat a generous amount of oil in a frying pan and, once hot, fry the meatballs until they are golden on all sides.
  5. Once fried, transfer the meatballs onto paper towels to remove excess oil.
  6. Serve the meatballs hot, as a second course or as a tasty finger food.

For a lighter Italian variant, you could bake the meatballs instead of frying them. In that case, place them on a baking tray lined with parchment paper and bake them in a preheated oven at 180 °C for about 20-25 minutes or until golden.
