Pork Roast Meatballs

Ingredients
- 500 g of cooked and minced pork roast
- 1 egg
- 2 tablespoons of grated Parmesan cheese
- 2 tablespoons of breadcrumbs
- 1 clove of garlic
- Chopped fresh parsley to taste
- Salt and pepper to taste
- Extra virgin olive oil for frying
Preparation
- In a large bowl, combine the minced pork roast, egg, Parmesan, breadcrumbs, finely chopped garlic, and parsley. Mix everything well to obtain a homogeneous mixture. If the mixture is too dry, you can add a little milk; if too wet, add more breadcrumbs.
- Season the mixture with salt and pepper to your taste.
- Take small portions of the mixture and shape them into round meatballs with your hands.
- Heat a generous amount of oil in a frying pan and, once hot, fry the meatballs until they are golden on all sides.
- Once fried, transfer the meatballs onto paper towels to remove excess oil.
- Serve the meatballs hot, as a second course or as a tasty finger food.
For a lighter Italian variant, you could bake the meatballs instead of frying them. In that case, place them on a baking tray lined with parchment paper and bake them in a preheated oven at 180 °C for about 20-25 minutes or until golden.
