Pork Chops with Pumpkin Cream and Taleggio Cheese

Ingredients
- 4 pork chops
- 500 g of cleaned pumpkin
- 200 g of taleggio cheese
- 1 white onion
- 2 cloves of garlic
- 1 sprig of rosemary
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Vegetable broth as needed
- Butter (optional)

Begin by preparing the pumpkin cream. Cut the pumpkin into pieces and finely slice the onion. In a pot, heat a drizzle of olive oil and sauté the onion with the peeled garlic cloves. Add the pumpkin, sauté briefly, and then pour in just enough vegetable broth to cover the ingredients. Cook over medium heat until the pumpkin becomes soft.

Remove the garlic and blend the pumpkin with an immersion blender until you obtain a smooth cream. If necessary, adjust the seasoning with salt and pepper. You can add a piece of butter to make the cream even more velvety.

Cut the taleggio cheese into cubes and incorporate it into the hot pumpkin cream, stirring until it is completely melted into the cream.

In the meantime, prepare the pork chops. Heat the chops with a drizzle of oil in a non-stick pan, along with the sprig of rosemary. Cook them for 5-7 minutes per side or until they are well browned and cooked to the desired doneness. Season with salt and pepper.

Serve the pork chops hot, accompanied by the pumpkin and taleggio cream. If you wish, you can finish the dish with a sprinkle of freshly ground black pepper and a fresh rosemary sprig for garnish.
