Porcini Terrine

The porcini terrine is a refined and flavorful dish that can be served as an appetizer or a main course. Here’s how to prepare it.

Ingredients

  • 500 g of fresh porcini mushrooms
  • 2 cloves of garlic
  • 2 sprigs of fresh thyme
  • 100 g of thinly sliced smoked bacon
  • 3 eggs
  • 200 ml of fresh cream
  • Salt and black pepper to taste
  • Butter for greasing the terrine
  • Toasted bread or croutons to serve

Preparation

  1. Clean the porcini mushrooms thoroughly using a brush or a damp cloth. Avoid washing them under running water to prevent them from absorbing too much moisture. Slice them into thin slices or cubes.

  2. In a large skillet, sauté the garlic cloves with a drizzle of extra virgin olive oil. Once golden, remove them and add the porcini mushrooms. Cook over medium-high heat, adding the chopped thyme, until the mushrooms have released their water and are golden brown. Season with salt and pepper to taste. Remove from heat and let cool.

  3. Take a terrine mold and grease it with a bit of butter. Line the bottom and sides of the mold with the smoked bacon, allowing the slices to hang slightly over the edge so that they can be folded over the top.

  4. In a bowl, whisk the eggs with the cream, salt, and pepper. Add the cooled porcini mushrooms and gently mix.

  5. Pour the mixture into the prepared mold and fold the bacon slices hanging over the edges over the filling.

  6. Preheat the oven to 180 °C. Cover the terrine with aluminum foil and cook it in a water bath in the oven for about 1 hour and 15 minutes, or until it feels firm to the touch.

  7. Remove the terrine from the oven and let it cool completely before placing it in the fridge. For best results, let it rest in the fridge overnight.

  8. The next day, remove the terrine from the mold and serve it sliced with toasted bread or croutons.
