Lasagna with Porcini, Pumpkin and Gorgonzola
17/11/2023Here’s an Italian recipe for delicious Lasagna with Porcini, Pumpkin and Gorgonzola, a dish that combines the sweetness of pumpkin with the intense flavor of porcini mushrooms and the creaminess of gorgonzola.
Ingredients
- 250 g of egg lasagna (pre-cook or oven cook)
- 500 g of cleaned and diced pumpkin
- 300 g of fresh or rehydrated porcini mushrooms
- 200 g of sweet gorgonzola
- 500 ml of béchamel sauce
- 1 clove of garlic
- Extra virgin olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for grating
- Butter to taste

Start with the pumpkin: in a pan, heat a drizzle of oil with a whole clove of garlic and add the pumpkin. Cook on medium-low heat until the pumpkin becomes soft. Season with salt and pepper and set aside.

In the meantime, clean the porcini mushrooms, slice them and cook them in a pan with a drizzle of oil and a pinch of salt until they release all their water and are slightly browned.

In a bowl, crumble the gorgonzola cheese and mix it with some béchamel sauce until you obtain a smooth and uniform cream.

Prepare a lasagna tray by lightly greasing it with butter. Make a first layer of lasagna, then add a layer of pumpkin, one of porcini mushrooms, and sprinkle with the gorgonzola and béchamel cream. Continue layering until all ingredients are used up.

Complete the top layer with the remaining béchamel sauce and a generous dusting of grated Parmesan cheese. Add a few small flakes of butter on the surface.

Bake in a preheated oven at 180 °C (356 °F) for about 30-40 minutes, or until the surface is golden brown and crispy.

Let the lasagna rest a few minutes before serving to allow it to set and become easier to cut.
This dish encapsulates some of the best autumnal flavors and pairs perfectly with a glass of full-bodied white wine or a young, fruity red.
