Porcini Mushroom Meatballs

Ingredients
- 500 g of ground meat (beef, pork, or a mix of the two)
- 300 g of fresh porcini mushrooms (you can also use dried porcini mushrooms, soaked in warm water)
- 1 large egg
- 1 medium onion, finely chopped
- 2 cloves of garlic, chopped
- 50 g of breadcrumbs
- 40 g of grated Parmesan cheese
- Chopped fresh parsley, to taste
- Salt and black pepper, to taste
- Extra virgin olive oil, as needed
Preparation
- Clean the porcini mushrooms carefully, removing any soil residues, and cut them into small pieces.
- Sauté the chopped onion and garlic in a drizzle of extra virgin olive oil until translucent.
- Add the porcini mushrooms to the sauté and cook until they are soft and have released their liquid. Let them cool.
- In a large bowl, mix the ground meat with the egg, breadcrumbs, Parmesan, parsley, salt, and pepper.
- Incorporate the cooled porcini mushrooms into the ground meat mixture and mix well until you have a homogeneous mixture.
- Take small portions of the mixture and form meatballs of the desired size.
- Heat some extra virgin olive oil in a frying pan and cook the meatballs on all sides until they are well browned and cooked to the right point.
- Once ready, you can serve them with a side of seasonal vegetables or with an accompanying sauce of your choice.
