Porcini Mushroom Meatballs

Ingredients

  • 500 g of ground meat (beef, pork, or a mix of the two)
  • 300 g of fresh porcini mushrooms (you can also use dried porcini mushrooms, soaked in warm water)
  • 1 large egg
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, chopped
  • 50 g of breadcrumbs
  • 40 g of grated Parmesan cheese
  • Chopped fresh parsley, to taste
  • Salt and black pepper, to taste
  • Extra virgin olive oil, as needed

Preparation

  1. Clean the porcini mushrooms carefully, removing any soil residues, and cut them into small pieces.
  2. Sauté the chopped onion and garlic in a drizzle of extra virgin olive oil until translucent.
  3. Add the porcini mushrooms to the sauté and cook until they are soft and have released their liquid. Let them cool.
  4. In a large bowl, mix the ground meat with the egg, breadcrumbs, Parmesan, parsley, salt, and pepper.
  5. Incorporate the cooled porcini mushrooms into the ground meat mixture and mix well until you have a homogeneous mixture.
  6. Take small portions of the mixture and form meatballs of the desired size.
  7. Heat some extra virgin olive oil in a frying pan and cook the meatballs on all sides until they are well browned and cooked to the right point.
  8. Once ready, you can serve them with a side of seasonal vegetables or with an accompanying sauce of your choice.
