Porcini Mushroom and Parmesan Salad

The porcini mushroom and Parmesan salad is a simple dish, perfect to enhance the freshness of the mushrooms and the bold flavor of the cheese. Here’s how to prepare it:

Ingredients

  • 400 g of fresh porcini mushrooms
  • 100 g of Parmesan cheese shavings
  • Juice of 1 lemon
  • Extra virgin olive oil
  • Chopped parsley (amount to taste)
  • Salt and black pepper (to taste)

Preparation

  1. Carefully clean the porcini mushrooms, removing any dirt with a brush or damp cloth. It’s important not to wash them under running water to avoid spoiling their texture.
  2. Thinly slice the mushrooms and place them in a bowl. Dress the slices with lemon juice to prevent them from turning black and to add a touch of freshness.
  3. Add extra virgin olive oil, a handful of chopped parsley, salt, and freshly ground black pepper, mixing gently to evenly distribute the seasonings.
  4. Arrange the dressed mushrooms on a serving plate and add the Parmesan shavings over the slices.
  5. Let the salad rest for a few minutes before serving, to allow the flavors to blend perfectly together.

Did you know?

The porcini mushroom and Parmesan salad highlights two Italian excellences. Porcini mushrooms, mainly harvested in the woods during autumn, are appreciated for their rich flavor and meaty texture. Parmesan, known as the “King of Cheeses,” is a hard, DOP cheese, produced exclusively in Italy in the provinces of Parma, Reggio Emilia, Modena, Bologna to the left of the Reno river, and Mantua to the right of the Po river. The combination of the two creates a contrast of flavors and textures that is celebrated in Italian cuisine.
