Porcini and Ham Roll

The porcini and ham roll is a rich and tasty dish that can surprise your guests. Here’s a recipe that might suit you:

Ingredients

  • 500 g of pizza dough or bread dough;
  • 300 g of cooked ham slices;
  • 250 g of fresh porcini mushrooms or rehydrated;
  • 200 g of mozzarella cheese, preferably buffalo mozzarella;
  • 1 clove of garlic;
  • Extra virgin olive oil;
  • Salt and pepper;
  • Fresh rosemary (optional);
  • Butter, as needed for greasing.

Preparation

  1. Prepare the pizza dough or purchase a ready-made roll of bread dough.
  2. Clean the porcini mushrooms with a damp cloth, slice them and sauté in a pan with a drizzle of oil and a clove of garlic for a few minutes. Season with a pinch of salt and add pepper.
  3. Roll out the pizza dough on a work surface to obtain a rectangle about half a centimeter thick.
  4. Brush the surface of the dough with some melted butter, then evenly distribute the cooked ham over the dough.
  5. On top of the ham, scatter the porcini mushrooms and pieces of buffalo mozzarella.
  6. If desired, add a pinch of chopped fresh rosemary for an aromatic touch.
  7. Roll up the dough on itself being careful not to let the filling escape and close the ends well.
  8. Place the roll on a baking tray previously greased with a bit of butter or lined with parchment paper.
  9. Bake in a pre-heated oven at 180 °C for about 30-40 minutes or until the surface of the roll is golden brown and crispy.
  10. Let it rest for a few minutes before slicing and serving.

Curiosities

The dough roll with porcini and ham can be a valid alternative to the usual pizza when you want something different yet still belonging to the Italian culinary tradition. Moreover, the use of the oven allows for a lighter and crispier texture compared to the classic stone-baked pizza. You can play with the flavors, perhaps adding thyme or sage, according to the desired taste.
