Lemon Chicken Strips

Ingredients
- 400 g of chicken breast
- Flour, as needed for dredging the chicken
- Juice of 1 lemon
- Grated zest of 1 lemon
- 1 clove of garlic
- 1 sprig of fresh rosemary
- Salt and pepper to taste
- Extra virgin olive oil
- 100 ml of chicken or vegetable broth
- Chopped fresh parsley, for garnish
Preparation
- Cut the chicken breast into strips, i.e., thin and elongated pieces.
- Lightly dredge the chicken strips in flour.
- In a large pan, heat a drizzle of extra virgin olive oil with the garlic clove and the sprig of rosemary. Once the garlic is golden, remove it together with the rosemary.
- Add the floured chicken strips to the pan and brown them over medium-high heat until they are well cooked and crispy on the outside.
- Deglaze with lemon juice, grate some lemon zest over the meat (be careful not to overdo it to avoid making the dish too bitter).
- Add the chicken broth, lower the flame, and let it cook for a few minutes so that the chicken is flavored and the sauce slightly reduces.
- Season with salt and pepper to your taste.
- Serve the lemon chicken strips sprinkled with chopped fresh parsley.
