Ingredients
- 250 g of instant polenta
- 1 L of water or meat broth
- Salt, to taste
- 400 g of fresh pork sausage
- 200 g of Taleggio or Fontina cheese (or any soft, melting cheese of your choice)
- Butter, as needed
- Grated Parmesan cheese, as needed (optional)
- Aromatic herbs like rosemary or sage, to flavor (optional)
Preparation

Bring water or meat broth to a boil in a large pot. Add salt to taste.

Gradually pour the polenta into the boiling water, stirring constantly with a whisk to prevent lumps from forming.

Lower the heat and continue to cook the polenta according to the package instructions, usually for about 5-8 minutes, until it thickens and becomes creamy. If desired, you can add a bit of butter to enrich the flavor.

While the polenta cooks, remove the skin from the sausages and crumble them into a pan. Add a bit of oil, the aromatic herbs if using, and cook the sausage, crushing it with a wooden spoon until it is nicely browned and cooked.

Slice the cheese or cut it into cubes and keep it ready.

When the polenta is ready, pour it onto a serving plate or directly into individual plates.

Distribute the cooked sausage over the polenta, and then add the pieces of cheese.
