Polenta Sandwich with Vegetables and Taleggio

Ingredients
- 250 g of instant polenta
- 1 L of water
- Salt, to taste
- 200 g of Taleggio cheese
- Mixed vegetables (such as zucchini, bell peppers, eggplants)
- Extra virgin olive oil
- Black pepper, to taste
- Fresh aromatic herbs (rosemary, thyme, basil), optionally

For the polenta, bring 1 L of salted water to a boil. As it starts to boil, sprinkle in the instant polenta, reduce the heat, and stir constantly to prevent lumps from forming. Cook according to the instructions on the package, usually for about 5 minutes or until it becomes thick and creamy.

Pour the polenta onto a tray lined with parchment paper, spreading it out evenly to about 1 cm thick. Allow it to cool completely.

Meanwhile, slice the vegetables thinly and grill them on a hot grill plate or in a pan with a drizzle of oil until they are soft and lightly charred at the edges.

When the polenta is cold and has set, use a cookie cutter or a glass to cut out circles or squares that will be the base and top of your sandwiches.

Cut the taleggio cheese into thin slices.

Assemble the sandwiches by layering a slice of polenta, grilled vegetables, taleggio cheese and, if you like, a pinch of pepper and some chopped herbs. Top with another slice of polenta.

Preheat the oven to 180 °C and bake the sandwiches for about 10 minutes or until the taleggio is melted and lightly golden.

Serve your polenta sandwiches with vegetables and taleggio immediately, perhaps with a simple mixed salad on the side.
