Polenta Roll with Sausage and Mushrooms

Ingredients
- 250 g of instant polenta
- 1 L of water
- Salt to taste
- 300 g of sausage
- 250 g of champignon or mixed mushrooms
- 1 clove of garlic
- Extra virgin olive oil
- Fresh rosemary (optional)
- 100 g of spun-curd cheese (such as scamorza or provolone), sliced
- Grated Parmesan to taste
- Black pepper
- Butter to grease the baking dish
Preparation

First, cook the polenta following the instructions on the package. The water must be brought to a boil and slightly salted before pouring in the cornmeal while stirring continuously to avoid the formation of lumps. Cook until you achieve a relatively firm consistency, usually about 5-8 minutes for instant polenta.

Once ready, pour the polenta onto a slightly wet work surface or parchment paper, and roll it out with a rolling pin until about 1 cm thick. Let it cool down.

Meanwhile, clean and slice the mushrooms, then sauté a clove of garlic in extra virgin olive oil. Add the mushrooms and let them cook until they’re golden. Flavor with fresh rosemary if you like. Remove the sausage from its casing and sauté it in a separate pan until it is well cooked.

Once the polenta has cooled, remove the garlic from the mushrooms and evenly distribute the sausage and mushrooms on top of the polenta. Add the sliced spun-curd cheese and a sprinkle of Parmesan.

Carefully roll up the polenta from the longer side, using the parchment paper or a spatula to help, creating a log.

Transfer the roll into a baking dish previously greased with a bit of butter, sprinkle some flakes of butter over the entire surface, and a dusting of Parmesan.

Bake in a preheated oven at 200 °C for about 20 minutes or until the surface becomes golden and crispy.

Let it rest a few minutes before cutting the roll into slices and serving.
