Polenta tart with radicchio, speck, and gorgonzola

Ingredients
- 250 g of maize flour for polenta
- 1 L of water
- Salt to taste
- Extra virgin olive oil
- 200 g of red Treviso radicchio
- 150 g of speck, sliced
- 150 g of sweet gorgonzola
- 1 small onion
- 30 g of butter
- Black pepper to taste
- 100 g of grated cheese (Parmesan or parmigiano)
Preparation

Start by preparing the polenta. Bring the water to a boil in a large pot and add salt. Gently pour the maize flour into the water, stirring constantly with a whisk to prevent lumps. Lower the heat and keep stirring until the polenta thickens (about 40 minutes). Once ready, spread it out on a lightly oiled surface to a thickness of about 1-2 cm, and let it cool.

In the meantime, clean the radicchio and cut it into strips. In a pan, sauté the finely chopped onion in butter. Add the radicchio and cook for a few minutes. Season with salt and pepper to taste.

Preheat the oven to 180 °C.

Cut the speck into strips and then into small pieces, while crumbling the gorgonzola. If you prefer a crisper speck, you could quickly sauté it in a pan.

Take the now solidified polenta and lay it out as a base in a previously oiled baking dish. On top of the polenta, distribute a layer of sautéed radicchio, then speck, and finally gorgonzola.

Sprinkle the entire surface with grated cheese, add a few flakes of butter and bake the polenta tart for about 20 minutes, until the surface is golden and the gorgonzola has melted.

Remove the tart from the oven and let it cool for a few minutes before serving.
