Polenta Pizza
17/11/2023Polenta pizza is a rustic dish that combines the Italian tradition of polenta with a presentation reminiscent of pizza. It is ideal for a different kind of comfort food or as a unique dish for a casual dinner. Here’s how to prepare it.
Ingredients
- 250 g of cornmeal for polenta
- 1 L of water
- Salt to taste
- 200 g of tomato puree
- 200 g of mozzarella
- Dried oregano to taste
- 150 g of sliced salami (optional)
- Extra virgin olive oil
- Fresh basil for garnish (optional)
Preparation
- To start, bring the water to a boil in a large pot and add salt.
- Gradually pour the cornmeal, constantly stirring with a whisk or a wooden spoon to prevent lumps from forming.
- Lower the heat and continue cooking the polenta, stirring frequently for about 40-45 minutes, until it becomes thick and starts to pull away from the sides of the pot.
- Spread the polenta on a round baking tray, previously greased with a little oil, trying to create a smooth, uniform base about 1-1.5 cm thick. Let it cool and harden for a few minutes.
- Once the polenta base has solidified, spread the tomato puree on top, leaving a free edge all around.
- Cut the mozzarella into slices or cubes and distribute it over the tomato puree.
- Add dried oregano as desired and, if you like, arrange the salami slices on top.
- Bake the polenta pizza in a preheated oven at 200° C for about 20 minutes, until the cheese is well melted and slightly golden.
- Remove the polenta pizza from the oven, let it rest for a few moments and garnish with a few leaves of fresh basil before serving.
The use of salami is optional and can be replaced with other ingredients of your choice, such as grilled vegetables, mushrooms, or different types of cheese.
