Polenta Cordon Bleu

I can provide you with an Italian version of the classic Cordon Bleu, which is usually made with meat, but using polenta as a base. It is an innovative dish that combines traditional Italian cuisine with one of the most appreciated dishes of international cuisine.

Ingredients

  • 250 g of ready-made polenta (cold and already set)
  • 100 g of cooked ham
  • 100 g of spun-curd cheese (for example, mozzarella)
  • Flour, as needed
  • 1 egg
  • Breadcrumbs, as needed
  • Salt and pepper, as needed
  • Oil for frying

Preparation

  1. Cut the set polenta into slices of about 1 cm thick. Then cut each slice to a size suitable to form medium-sized polenta “sandwiches.”
  2. Take a slice, place a slice of cooked ham and one of spun-curd cheese on it, taking care not to exceed the edges.
  3. Cover with another slice of polenta, pressing lightly with the hands to make everything adhere.
  4. Dredge each polenta “sandwich” in flour, making sure to coat it evenly.
  5. Beat the egg in a bowl with a pinch of salt and pepper, then dip the Polenta Cordon Bleus to completely coat them.
  6. After the egg, also coat them in breadcrumbs.
  7. Heat plenty of oil in a frying pan and when hot, fry the Polenta Cordon Bleus until they are golden brown on both sides.
  8. Drain them on paper towels to remove excess oil.
