Poke temaki wrap

Poke Temaki Wraps are a delectable combination of the Hawaiian culinary tradition of poke and the Japanese tradition of temaki. Here is how to prepare them, remembering that you can customize with your favorite ingredients.

Ingredients

  • 200 g of sushi rice
  • 2 tablespoons of rice vinegar
  • 1 teaspoon of sugar
  • 1 pinch of salt
  • 150 g of fresh salmon fillet (or another fish to your liking)
  • 1 ripe avocado
  • 1/2 cucumber
  • 2 green onions
  • Toasted sesame seeds (to taste)
  • Nori seaweed (cut into squares of about 15 cm per side)
  • Soy sauce (for serving)
  • Sriracha or spicy mayonnaise (optional)
  • Tobiko or masago (optional, for an extra crunch)

Preparation

  1. First, prepare the sushi rice by washing it under cold running water until the water runs clear. Then, cook the rice following the instructions on the package. While it’s still warm, season the rice with a mixture of rice vinegar, sugar, and salt.

  2. Dice the salmon into small cubes, then season it with a bit of soy sauce and slice it thinly. Do the same with the avocado and cucumber, cutting them into thin slices or dices. Finely chop the green onions.

  3. Lightly toast the sesame seeds in a pan over medium heat until they are golden brown. This step enhances their flavor.

  4. To assemble the temaki wraps, place a square of nori seaweed on a plate, spread a thin layer of rice on it leaving about 1 cm of margin on the seaweed, then add in a row the diced fish, avocado, cucumber, and green onions.

  5. At this point, sprinkle with toasted sesame seeds and, if you like, add a drizzle of sriracha or a bit of spicy mayonnaise and tobiko for extra crunchiness.

  6. To wrap, fold the nori seaweed over itself starting from the side with the rice towards the opposite side, creating a cone that encases the ingredients inside. Remember that the nori seaweed should be wrapped tightly, to keep the temaki closed.

Serve the poke temaki wraps immediately after preparing them, accompanied, if desired, with soy sauce for dipping.
