Poke cake

The name “poke” comes from the English “to poke” which means “to puncture”, referring to the action of making holes in the cake to allow the frosting or topping to seep inside. Traditionally, it consists of a cake base to which jelly, pudding, mousse, caramel, melted chocolate, or any other kind of filling is added into the holes before covering the cake with a cream or frosting. Here’s how to prepare a classic version of the poke cake:
Ingredients
- 1 rectangular sponge cake already baked (you can buy a ready-made base or prepare one yourself)
- 1 package of pudding in your preferred flavor (vanilla, chocolate, etc.)
- 500 ml of milk (amount according to the pudding package instructions)
- Fresh fruit of your choice for garnish (strawberries, kiwis, bananas, etc.)
- Whipped cream or sugar icing to cover the cake
Preparation
- Prepare the pudding: Follow the instructions on the pudding package, using the milk. Allow the pudding to thicken but not completely solidify.
- Poke the cake: Once the sponge cake has cooled, use the handle of a wooden spoon to make evenly distributed holes on the surface of the cake. The holes should be large enough to allow the pudding to enter, but not so close together that the cake breaks.
- Fill the holes: Pour the pudding over the surface of the cake, using a spatula or the back of a spoon to help push the pudding into the holes.
- Chill the cake: Place the cake in the refrigerator for at least an hour, allowing the pudding to set and the flavors to infuse into the cake.
- Decorate: Before serving, cover the cake with whipped cream or a sugar icing. Then decorate the surface with your choice of freshly cut fruit.
