Poke

Poke is a traditional Hawaiian dish that has gained popularity around the world in recent years. Originally, it’s a seasoned raw fish salad that traditionally includes red tuna. I’ll present a basic version of the dish, which can be adapted according to your tastes or the ingredients you have available.

Ingredients

  • 200 g of sushi rice
  • 300 g of fresh tuna for sushi
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of honey (optional, to sweeten the sauce)
  • 1 avocado
  • 1/2 teaspoon of sesame seeds
  • Chopped green onion (to taste)
  • Rehydrated wakame (seaweed) (optional)
  • Shelled edamame (optional)
  • Julienned cucumber (optional)
  • Grated daikon radish (optional)
  • Tobiko or masago (fish roe) for garnish (optional)

Preparation

  1. Start by cooking the sushi rice according to the package instructions. Once cooked, let it cool to room temperature.
  2. Cut the tuna into 1 cm cubes and place it in a bowl.
  3. In a separate bowl, combine the soy sauce, sesame oil, and if you wish, a touch of honey. Mix the ingredients well.
  4. Pour the marinade over the tuna and allow it to flavor for about 5-10 minutes.
  5. Cut the avocado into cubes and prepare the other ingredients you want to add to your poke bowl.
  6. Assemble the poke bowl starting with a base of sushi rice, then add the marinated tuna, avocado, and any other chosen ingredients on top.
  7. Sprinkle with sesame seeds and chopped green onions.
  8. If you have decided to use wakame, edamame, cucumber, daikon, or fish eggs, add them now.
  9. Serve your poke bowl fresh.

Each poke bowl is customizable: you can add or remove ingredients depending on your tastes or what you have available. For instance, if you don’t have tuna, you can use salmon or even opt for a vegetarian version with marinated tofu. In some cases, brown rice or even a mix of grains is added for an additional nutritional touch.

In Hawaiian, “Poke” means “to cut into pieces” and refers to the way in which the fish is prepared in this dish. Recently, its popularity has skyrocketed, and restaurants and take-aways devoted exclusively to this dish have emerged all over the world.
