Plumcake with chocolate chips
17/11/2023The plumcake with chocolate chips is a delight for breakfast or as a snack. Here’s how to prepare it with an Italian touch.
Ingredients
- 200 g of all-purpose flour
- 200 g of sugar
- 200 g of butter at room temperature
- 3 eggs
- 1 packet of baking powder
- A pinch of salt
- 100 g of chocolate chips
- 1 teaspoon of vanilla extract (optional)
- Powdered sugar for decorating (optional)
Preparation
- Preheat the oven to 180 °C (350 °F) and butter or line a plumcake mold with parchment paper.
- In a bowl, whip the soft butter with sugar until the mixture is fluffy and light.
- Add the eggs, one at a time, making sure each one is well incorporated before adding the next.
- If using, incorporate the vanilla extract into the mixture.
- In another bowl, sift together the flour, baking powder, and salt. Add these dry ingredients to the egg and butter mixture, mixing gently until you have a smooth batter.
- Add the chocolate chips to the batter, reserving a few to sprinkle on the surface before baking. Mix to evenly distribute them.
- Pour the batter into the prepared mold and sprinkle the surface with the reserved chocolate chips.
- Bake the plumcake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Let the plumcake cool in the mold for about 10 minutes, then transfer it to a wire rack to cool completely.
- If you wish, before serving, you can dust the plumcake with powdered sugar.
Curiosity
The term “plumcake” originates from the traditional British “plum cake,” where “plum” referred to raisins. Today the term is often used in Italy to describe rectangular baked cakes with various ingredients, including chocolate chips. Despite the name, they do not always contain plums.
