Ingredients
- 250 g of all-purpose flour
- 125 g of cold butter, cubed

Preparation
- Begin by preparing the shortcrust pastry. In a large bowl, mix the flour with the granulated sugar and a pinch of salt. Add the cold butter cubes and quickly work with the fingertips until the mixture is crumbly.
- Add the whole egg and the yolk, along with the grated lemon zest, and knead until you form a homogenous dough. Avoid overworking the dough to keep the pastry crumbly.
- Shape the dough into a disc, wrap it in cling film, and let it rest in the refrigerator for about 30 minutes.
- Meanwhile, wash the plums, cut them in half, and pit them. Toss them in a bowl with a tablespoon of brown sugar and lemon juice.
- Preheat the oven to 180°C.
- Roll out the dough into a thin disk, lining a previously buttered and floured tart pan. Prick the base with a fork to prevent it from puffing up during baking.
- Distribute the plums on the base of the tart, placing them cut side up.
- Bake the tart for about 40-45 minutes or until the shortcrust pastry is golden and the plums are soft and juicy.
