Plum Roll

Ingredients

  • 230 g of all-purpose flour
  • 3 eggs
  • 130 g of granulated sugar

  • 50 ml of rum (optional)

Preparation

  1. If you are using dried plums, soak them in hot water for a few hours or, if in a hurry, in boiling water for about 30 minutes. If you opt to use rum, the dried plums can also be soaked in rum diluted with water to add an additional layer of flavor.
  2. Preheat the oven to 180 °C.
  3. Beat the eggs with the granulated sugar until they become light and foamy. Add the vanilla extract.
  4. In a separate bowl, mix the flour with the baking powder and a pinch of salt.
  5. Gently fold the dry ingredients into the egg mixture, adding milk if necessary to achieve a soft but not too liquid batter.
  6. Pour the batter onto a baking tray lined with parchment paper, leveling it into a uniform layer.
  7. Bake in the oven for about 10-15 minutes or until the surface is golden and a tester inserted comes out clean.
  8. In the meantime, drain the plums and if needed cut them into small pieces. You might also cook them slightly in a saucepan with a bit of sugar to caramelize them.
  9. Once the batter is baked, turn it out onto a damp tea towel and dust it with powdered sugar.
  10. Spread the plums over the surface of the cake.
  11. With the help of the tea towel, gently roll the cake upon itself to form a roll.
  12. Finish by dusting the roll with additional powdered sugar and allow to rest before cutting and serving.
