Plum Muffins

Ingredients

  • 250 g of all-purpose flour
  • 150 g of sugar
  • 100 g of dried plums
  • 100 ml of milk
  • 2 eggs
  • 80 g of melted butter
  • 1 packet of baking powder
  • 1 pinch of salt
  • Brown sugar for sprinkling (optional)
  • Vanilla extract (optional)

Preparation

  1. Preheat the oven to 180 degrees C. Grease with a little butter or line a muffin tin with paper liners.
  2. In a large bowl, sift the flour with the baking powder and a pinch of salt.
  3. In another bowl, whisk the eggs with the sugar until you get a light and frothy mixture. Add the melted butter and a couple of drops of vanilla extract if you desire a stronger flavor. Mix well.
  4. Cut the dried plums into small pieces.
  5. Slowly incorporate the dry ingredients into the wet ingredients, alternating with the milk until you get a smooth batter. Do not mix too much to avoid the muffins becoming hard.
  6. Add the pieces of plum to the batter and gently stir to distribute them evenly.
  7. Fill each muffin tin cavity about 3/4 full, and if you wish, sprinkle some brown sugar on the surface of each muffin.
  8. Bake for about 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
