Ingredients
- 1 kg of ripe plums
- 500 g of sugar (can vary according to your sweetness preference)
- The juice of 1 lemon
- 2 or 3 tablespoons of freshly grated ginger (according to your preference for spice)
- A pinch of cinnamon (optional)
Preparation
- Wash the plums, cut them in half, and remove the pits.
- In a large pot, combine the plums, sugar, lemon juice, grated ginger, and cinnamon if you decided to use it.
- Turn on the heat and bring the mixture to a boil. Then reduce the heat and let it simmer for about 1-2 hours, stirring occasionally until the jam thickens. The duration depends a lot on the water content in the fruit.
- To test if the jam is ready, place a teaspoon of jam on a cold plate and tilt it; if it runs slowly, it’s ready, otherwise continue cooking.
- Once the desired thickness is reached, remove the pot from the heat.
- Sterilize some glass jars and their lids by boiling them in water for 10 minutes.
- Pour the hot jam into the sterilized jars, seal them tightly, and invert them to create a vacuum.
- Let them cool completely before storing them in the pantry.
