Custard and Plum Tart

Here’s the recipe for a delicious Custard and Plum Tart:

Ingredients

  • 300g of 00 flour
  • 150g of cold butter, cubed
  • 130g of icing sugar
  • 1 whole egg
  • 1 egg yolk
  • Grated zest of 1 lemon
  • A pinch of salt

For the custard cream:

  • 500ml of milk
  • 4 egg yolks
  • 120g of sugar
  • 40g of 00 flour
  • Zest of 1 lemon
  • 1 vanilla bean or a teaspoon of vanilla extract

For the plums:

  • 500g of ripe plums
  • 50g of sugar
  • 1 small glass of rum (optional)
  • Juice of 1 lemon

Preparation

  1. Start by preparing the shortcrust pastry: in a bowl, combine the flour, icing sugar, butter, lemon zest, and a pinch of salt. Work the ingredients quickly until you get a sandy mixture.
  2. Add the egg and yolk, and knead until the dough is homogeneous. Form a dough ball, wrap it in cling film, and let it rest in the refrigerator for at least 30 minutes.
  3. In the meantime, prepare the custard cream: bring the milk almost to a boil with the lemon zest and vanilla seeds extracted from the bean (or vanilla extract).
  4. In a bowl, beat the egg yolks with the sugar until they turn light and foamy, then add the sifted flour and mix.
  5. Remove the lemon zest from the milk and pour the hot milk over the egg yolk, sugar, and flour mixture, stirring continuously.
  6. Return the mixture to medium heat and keep stirring until the cream thickens. Remove from the heat and let it cool, covering with cling film touching the surface of the cream.
  7. Cut the plums into quarters, remove the stones, and place them in a pan with the sugar and lemon juice. Add the rum if desired. Cook for about 10-15 minutes until the plums are slightly caramelized and the liquid has reduced. Let cool.
  8. Roll out the shortcrust pastry in a previously buttered and floured tart pan, creating a raised edge. Prick the bottom with a fork.
  9. Pour the cooled custard cream onto the tart base and arrange the cooked plums on top.
  10. Bake in a preheated oven at 180°C for about 40 minutes, or until the shortcrust pastry is golden and the cream has slightly set.
