No-Rise Yogurt Mini Pizzas

No-rise yogurt mini pizzas are a quick and tasty alternative to the traditional pizza that requires proofing time. Here’s the recipe to make them.

Ingredients

  • 150 g of all-purpose flour
  • 125 g of Greek yogurt (or another type of thick yogurt)
  • 1 teaspoon of baking soda (as a leavening agent)
  • 1 pinch of salt
  • Tomato puree to taste
  • Mozzarella to taste
  • Extra virgin olive oil to taste
  • Oregano to taste
  • Other ingredients to taste for the topping, such as mushrooms, ham, olives, etc.

Preparation

  1. In a large bowl, mix the flour with the baking soda and salt.
  2. Add the Greek yogurt and start to mix with a fork. Then, knead with your hands until you obtain a homogeneous and non-sticky dough (if necessary, add a little flour).
  3. On a lightly floured surface, roll out the dough with a rolling pin to the desired thickness, but not too thin.
  4. Using a pastry cutter or a glass, cut out discs from the rolled dough and place them on a baking tray lined with parchment paper.
  5. Top each disc with a bit of tomato puree, a drizzle of oil, a pinch of oregano, and the mozzarella cut into cubes or strips. If you like, add any other ingredients to your taste.
  6. Bake the mini pizzas in a preheated oven at 180°C for about 15-20 minutes or until they are golden brown and the mozzarella is nicely melted.
  7. Serve hot, perhaps accompanied by a fresh salad or as an appetizer at a party or aperitif.

Curiosity

These mini pizzas are a quick solution for times when you crave something tasty but don’t have time to wait for the traditional pizza proofing times. Using yogurt in the dough not only bypasses the need to rise but also gives a unique softness to the finished product. Remember, you can customize the topping as you like, just as with traditional pizza.
