Potato Pizzaiola Tart

Ingredients

  • 800 g of potatoes
  • 400 g of tomato puree
  • 150 g of mozzarella
  • 100 g of grated Parmesan
  • 2 cloves of garlic
  • Oregano to taste
  • Fresh basil to taste
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by peeling the potatoes and cutting them into thin slices, then boil them in salted water for about 3-5 minutes. They should not be completely cooked but just slightly softened. Drain the potatoes and let them cool.

  2. While the potatoes are cooling, prepare the pizzaiola sauce. In a pan, fry the chopped garlic cloves in a little oil, then remove the garlic and pour in the tomato puree. Add salt, pepper, and oregano and let cook for about ten minutes. If you like, add some torn fresh basil towards the end of cooking.

  3. Take a baking dish and grease the bottom with a little oil. Arrange a layer of potatoes, cover with some of the pizzaiola sauce and sprinkle with a handful of grated Parmesan and mozzarella previously cut into small cubes or slices.

  4. Proceed by creating more layers in the same order: potatoes, sauce, Parmesan, and mozzarella, finishing with a final layer of potatoes, sauce, and a generous handful of Parmesan.

  5. Bake the potato pizzaiola tart in a preheated oven at 200 °C for about 20-25 minutes, or until you see that the surface is golden brown and a nice crust has formed.

  6. Let the tart rest for a few minutes before serving, so it can be cut more easily. Decorate it with a few fresh basil leaves for a touch of color and aroma.
