Pizzaiola-style Muffins
17/11/2023Pizzaiola-style muffins are a fusion between traditional American baking and the typical flavors of an Italian dish. Here’s how to prepare them.
Ingredients
- 250 g of flour
- 2 eggs
- 100 ml of milk
- 80 ml of olive oil
- 1 packet of baking powder
- 150 g of mozzarella cut into cubes
- 100 g of peeled tomatoes or tomato puree
- 2 tablespoons of tomato paste
- 1 teaspoon of oregano
- Salt to taste
- Pepper to taste
- Fresh basil (optional)
- Pitted black olives (optional)
- Salted capers, rinsed (optional)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, sift the flour and mix it with the baking powder, a pinch of salt, and pepper.
- In another bowl, lightly beat the eggs and add the milk and olive oil.
- Combine the liquid ingredients with the dry ingredients and mix until homogeneous.
- Add the mozzarella, tomatoes, tomato paste, and oregano to the mixture, stirring well.
- If desired, you can also add torn basil leaves, black olive slices, and capers.
- Distribute the batter into the muffin cups, filling them about 3/4 full.
- Place in the preheated oven and bake for about 20-25 minutes or until they are golden and well risen.
- Remove from the oven and let the muffins cool before serving.
