Pizzaiola-style Muffins

Pizzaiola-style muffins are a fusion between traditional American baking and the typical flavors of an Italian dish. Here’s how to prepare them.

Ingredients

  • 250 g of flour
  • 2 eggs
  • 100 ml of milk
  • 80 ml of olive oil
  • 1 packet of baking powder
  • 150 g of mozzarella cut into cubes
  • 100 g of peeled tomatoes or tomato puree
  • 2 tablespoons of tomato paste
  • 1 teaspoon of oregano
  • Salt to taste
  • Pepper to taste
  • Fresh basil (optional)
  • Pitted black olives (optional)
  • Salted capers, rinsed (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, sift the flour and mix it with the baking powder, a pinch of salt, and pepper.
  3. In another bowl, lightly beat the eggs and add the milk and olive oil.
  4. Combine the liquid ingredients with the dry ingredients and mix until homogeneous.
  5. Add the mozzarella, tomatoes, tomato paste, and oregano to the mixture, stirring well.
  6. If desired, you can also add torn basil leaves, black olive slices, and capers.
  7. Distribute the batter into the muffin cups, filling them about 3/4 full.
  8. Place in the preheated oven and bake for about 20-25 minutes or until they are golden and well risen.
  9. Remove from the oven and let the muffins cool before serving.
