Ingredients
- 2 large eggplants
- Flour, as needed for breading
- 2 eggs
- Bread crumbs, as needed for breading
- Oil for frying
- 400 g of tomato puree
- 2 cloves of garlic
- Oregano, to taste
- Salt, to taste
- Pepper, to taste
- Mozzarella, to taste (or a stringy cheese of your choice)
- Grated Parmesan cheese, to taste
- Fresh basil, a few leaves
Preparation

Start by washing the eggplants, dry them, and slice them lengthwise into slices about 1 cm thick.

Salt the eggplant slices and leave them in a colander for about 30 minutes to lose their vegetative water; afterwards, rinse and dry them well with some kitchen paper.

Bread the eggplants: first coat them in flour, then dip into beaten egg, and finally in breadcrumbs. Make sure the breading sticks well to the eggplant slices.

In a large pan, heat plenty of oil and fry the breaded eggplants until they are golden on both sides. Then, drain them on paper towels to remove excess oil.

In another pan, sauté the garlic in a drizzle of oil, then add the tomato puree, salt, pepper, and oregano. Let the sauce cook for about 15 minutes over medium heat, then remove the garlic.

In a baking dish, lay down a base of tomato sauce, then arrange the eggplant cutlets, cover with more sauce, sprinkle with grated Parmesan, and add the mozzarella in small pieces.
