Frittata alla pizzaiola

Ingredients

  • 6 eggs
  • 100 g of mozzarella (preferably fior di latte)
  • 150 g of tomato puree
  • 1 clove of garlic
  • Oregano to taste
  • Fresh basil to taste
  • 50 g of grated Parmesan cheese
  • Salt and pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by heating a drizzle of extra virgin olive oil in a non-stick frying pan and add the clove of garlic. Sauté until it becomes golden, then remove it and pour the tomato puree into the pan.

  2. Let the tomato puree cook for about 10 minutes over medium heat. Season with salt and pepper, and add a pinch of oregano and a few hand-torn basil leaves.

  3. While the sauce cooks, crack the eggs into a bowl, add salt, pepper, and beat them with a fork or a whisk, until you have a homogeneous mixture.

  4. Add the grated Parmesan to the beaten eggs and mix well.

  5. Once the sauce is ready, take it out of the pan and set it aside. In the same pan, add another drizzle of oil and pour in the egg mixture.

  6. Let the frittata cook over medium-low heat until the bottom has set, then spread the tomato sauce over the surface and add the diced mozzarella.

  7. Cover the pan with a lid and let the frittata finish cooking and the mozzarella melt, which will take about another 5-7 minutes.

  8. Once ready, you can serve your pizzaiola-style frittata hot or at room temperature, garnished with some fresh basil leaves.
