Ingredients
- 320 g of risotto rice (such as Carnaroli or Arborio)

- 250 g of peeled tomatoes

- 50 g of pitted black olives
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
- 1 l of vegetable or meat broth
- 1 small onion
- 80 g of grated Parmesan cheese
- 1 small glass of white wine
Preparation
- Start by preparing the vegetable or meat broth, which should be kept warm throughout the preparation of the risotto.
- Finely chop the onion and sauté in a large pan with extra virgin olive oil. When it becomes translucent, add the rice.
- Toast the rice until the grains become pearly, then deglaze with the white wine and let the alcohol evaporate.
- Begin to add the hot broth, one ladle at a time, waiting for the liquid to be absorbed before adding the next ladle, continuing to stir.
- While the rice is cooking, in another pan, briefly cook the peeled tomatoes with a clove of garlic (which you will then remove) and add the chopped black olives and some hand-torn basil leaves. Season with salt and pepper to taste. This will be your pizza-flavored topping.
- After about 15-18 minutes, check the rice for doneness; it should be al dente. Then incorporate the tomato and olive mix into the rice.
