Pizza Doughnuts

I can provide you with the recipe for pizza doughnuts, a fun way to serve a dough similar to that of pizza but in the form of small doughnuts that can be enjoyed perhaps at a buffet or as a snack.

Ingredients

  • 500g of type 00 flour
  • 300ml of lukewarm water
  • 12g of fresh brewer’s yeast (or 4g of dry brewer’s yeast)
  • 10g of sugar
  • 10g of salt
  • 20g of extra virgin olive oil
  • Tomato puree as needed
  • Oregano as needed
  • Grated cheese (such as Parmesan) as needed
  • Diced mozzarella as needed
  • Pitted black olives as needed

Preparation

  1. Start by dissolving the fresh brewer’s yeast in lukewarm water with the sugar. If you use dry yeast, follow the instructions on the package for preparation.
  2. In a large bowl, pour the flour and create a well in the center. Pour in the dissolved yeast, the oil, and begin to knead, gradually adding the salt.
  3. Work the dough until it forms a homogenous and elastic ball. Let it rise in a warm place, covered with a cloth, for about 2 hours or until it doubles in volume.
  4. After the dough has risen, take it and divide it into small portions of about 100g each.
  5. Shape each portion into long strips and then close them to form a doughnut shape. Let them rest again for about 30 minutes.
  6. Preheat the oven to 200°C.
  7. Arrange the doughnuts on a baking tray lined with parchment paper and add a spoonful of tomato puree on each doughnut, spreading it well. Sprinkle with oregano and grated cheese.
  8. Add a few cubes of mozzarella and some black olives on top.
  9. Bake the doughnuts for 15-20 minutes or until they are golden and the cheese is well melted.
  10. Serve warm or at room temperature.
