Pita with Eggplant and Chicken

I’ll be happy to help! Here’s a recipe that blends together Mediterranean flavors with an Italian twist. The recipe for pita with eggplant and chicken is quite simple and full of flavors.

Ingredients

  • 2 chicken breasts
  • 2 medium eggplants
  • 4 pitas (pita bread)
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Dried oregano
  • Fresh pears (optional for a sweet twist)
  • 100g of Greek yogurt
  • 1 tablespoon of chopped fresh mint
  • 1 small red onion, thinly sliced
  • Arugula or salad greens of your choice

Preparation

  1. Start with the chicken: cut the chicken breasts into strips, season them with salt, pepper, crushed garlic, lemon juice, and a bit of oregano. Leave them to marinate for about 30 minutes.

  2. While the chicken is marinating, slice the eggplants lengthwise, brush the slices with olive oil, salt, and pepper, and grill on a hot griddle until they become soft and slightly charred at the edges.

  3. In a well-heated pan, cook the chicken until it is well-browned and properly cooked.

  4. Meanwhile, season the Greek yogurt with a pinch of salt, pepper, and the chopped mint to create a fresh sauce.

  5. Warm the pitas in the oven or on a griddle until they are slightly toasted and flexible.

  6. Now assemble your dish: open the pita and fill it with the chicken strips, grilled eggplants, red onion, arugula, or the salad greens you prefer.

  7. Add a spoonful of the yogurt sauce on top and, if you want, some slices of pear for a sweet contrast.

  8. Serve immediately.
