Pita with fried chicken

Fried chicken pita is a tasty dish that combines the softness of pita bread with the crispiness of chicken. Here’s how we can give an Italian twist to this recipe, using Mediterranean aromatic herbs and a fresh salad as an accompaniment.

Ingredients

  • 2 chicken breasts
  • 100 g of flour
  • 1 egg
  • 100 g of breadcrumbs
  • Salt to taste
  • Pepper to taste
  • Dried oregano to taste
  • Chopped rosemary to taste
  • 4 pita breads
  • Oil for frying
  • Lettuce to taste
  • Tomatoes to taste
  • 1 red onion
  • Mayonnaise (optional)
  • Greek yogurt (optional)
  • 1 lemon (for garnish)

Preparation

  1. Start by cutting the chicken breasts into strips not too thick, then salt and pepper to taste.
  2. Prepare three plates for breading: one with flour, one with beaten egg, and one with breadcrumbs mixed with oregano and chopped rosemary.
  3. Dip the chicken strips first in the flour, then into the egg, and finally into the spiced breadcrumbs.
  4. Heat plenty of oil in a frying pan and fry the breaded chicken until it is golden and crispy. Drain the chicken on paper towels to remove excess oil.
  5. In the meantime, prepare a small salad with lettuce, tomatoes, and thinly sliced red onion, seasoning with oil, salt, and a bit of lemon juice.
  6. Heat the pita bread in the oven or on a non-stick pan to make them softer.
  7. Open the pita bread and fill them with the fried chicken, salad, and if you like, a spoonful of mayonnaise or Greek yogurt to add creaminess.

Optionally, you can also add lemon slices to squeeze over the fried chicken, which will add freshness.
